Ingredients

  • 3 oz (1 packet) Raspberry-flavored gelatin
  • 3 oz (1 packet) Orange-flavored gelatin
  • 2 cups Boiling water
  • 1.5 cups Cold water
  • 0.5 cups Orange juice
  • 1 cup Fresh raspberries
  • 1 cup Whipped topping
  • 1 whole orange Zest of an orange
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Lightly coat a 6-cup gelatin mold or bundt pan with nonstick cooking spray.

Step 2

In a large mixing bowl, combine the raspberry-flavored gelatin and orange-flavored gelatin.

Step 3

Pour 2 cups of boiling water into the bowl and stir for 2-3 minutes, or until the gelatin is fully dissolved.

Step 4

Stir in 1.5 cups of cold water and 0.5 cups of orange juice into the gelatin mixture.

Step 5

Place the bowl in the refrigerator for about 20-30 minutes, or until the mixture begins to thicken slightly but is not fully set. (It should have the consistency of unbeaten egg whites.)

Step 6

Remove the bowl from the refrigerator and gently fold in the fresh raspberries, whipped topping, and orange zest until evenly distributed.

Step 7

Pour the mixture into the prepared gelatin mold or bundt pan. Smooth the surface with a spatula if needed.

Refrigerate for at least 4 hours, or until the mold is fully set and firm to the touch.

To unmold, briefly dip the mold into warm water (for about 10 seconds) to loosen the edges. Place a serving platter on top of the mold and invert it to release the Raspberry Orange Mold.
