Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 cups Rolled oats
  • 0.75 cups Brown sugar
  • 0.75 cups Unsalted butter
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Baking soda
  • 1 cup Raspberry preserves
  • 0.5 cups Fresh raspberries (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan or line it with parchment paper for easier removal.

Step 2

In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, salt, and baking soda.

Step 3

Cut the unsalted butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture is crumbly and resembles coarse sand.

Step 4

Reserve 1 cup of the crumb mixture for the topping and press the rest firmly and evenly into the bottom of the prepared baking pan to create the crust.

Step 5

Spread the raspberry preserves evenly over the crust, leaving a small border around the edges to prevent sticking.

Step 6

If desired, sprinkle fresh raspberries on top of the preserves to add extra texture and flavor.

Step 7

Sprinkle the reserved crumb mixture evenly over the raspberry layer to form the topping.

Step 8

Bake in the preheated oven for 30–35 minutes, or until the topping is golden brown and the raspberry filling is bubbling.

Step 9

Remove the baking pan from the oven and let it cool completely on a wire rack before slicing into bars.

Step 10

Cut into 9 equal squares and serve. These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for longer freshness.
