Ingredients

  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar
  • 2 scoops vanilla ice cream
  • 2 cups soda water or club soda
  • 1 cup ice cubes
  • 0.5 cup whipped cream
  • 4 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

In a small bowl, mash the fresh raspberries with the granulated sugar using a fork until the mixture becomes a sweet raspberry puree. Set aside.

Step 2

Fill two tall glasses halfway with ice cubes.

Step 3

Divide the raspberry puree equally between the two glasses, pouring it over the ice.

Step 4

Add one scoop of vanilla ice cream into each glass on top of the raspberry mixture.

Step 5

Slowly pour soda water or club soda into each glass, filling them to about three-quarters full. Be careful to pour gently to minimize foam overflow.

Step 6

Top each glass with a generous dollop of whipped cream.

Step 7

Garnish with fresh mint leaves, if desired, and serve immediately with a straw and a long spoon.
