Ingredients

  • 6 large Egg yolks
  • 0.75 cup Granulated sugar
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground nutmeg
  • 1 cup Fresh raspberries
  • 0.5 cup Raspberry puree (strained, no seeds)
  • 2 tablespoons Optional: Raspberry liqueur

Directions

Step 1

In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture becomes creamy and light in color, about 2-3 minutes.

Step 2

In a medium saucepan, combine the whole milk, heavy cream, and ground nutmeg. Heat the mixture over medium heat until it is warm and steamy but not boiling.

Gradually and carefully pour a small amount of the warm milk mixture into the egg mixture while whisking constantly to temper the eggs. Continue to slowly add the warm milk while whisking until fully combined.
