Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves, minced
  • 0.5 cup Chicken broth
  • 1 cup Fresh raspberries
  • 3 tablespoons Raspberry preserves
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Honey
  • 2 sprigs Fresh thyme (optional, for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium, then add the butter to the skillet. Once melted, stir in the minced garlic and sauté for about 30 seconds, until fragrant.

Step 4

Pour in the chicken broth and scrape the bottom of the pan to deglaze. Let it simmer for 2 minutes.

Step 5

Add the fresh raspberries, raspberry preserves, balsamic vinegar, and honey to the skillet. Stir well to combine and cook for 4-5 minutes, breaking down the raspberries with the back of your spoon.

Step 6

Return the chicken breasts to the skillet, spooning the raspberry sauce over them. Let the chicken simmer in the sauce for another 5-7 minutes, allowing the flavors to meld together and the chicken to reheat.

Step 7

Taste the sauce and adjust seasoning if needed.

Step 8

Serve the raspberry chicken hot, garnished with fresh thyme sprigs if desired. Pair with rice, mashed potatoes, or a fresh green salad.
