Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.5 cup Sugar
  • 1 teaspoon Vanilla extract
  • 2.5 teaspoons Unflavored gelatin
  • 3 tablespoons Water (for blooming gelatin)
  • 2 cups Mixed tropical fruits (mango, pineapple, kiwi, etc.) - diced
  • 0.5 cup Orange juice
  • 2 tablespoons Honey
  • 1 teaspoon Cornstarch
  • 1 tablespoon Water (for cornstarch slurry)
  • 5 leaves Mint leaves (optional for garnish)

Directions

Step 1

Place the 2.5 teaspoons of unflavored gelatin in a small bowl. Add 3 tablespoons of water and let it bloom for 5 minutes.

Step 2

In a saucepan, combine the heavy cream, whole milk, and sugar. Heat the mixture over medium heat until the sugar dissolves completely, but do not let it boil.

Remove the saucepan from the heat and stir in the vanilla extract.

Add the bloomed gelatin to the hot cream mixture and whisk until the gelatin is fully dissolved.

Pour the mixture into 4 individual serving glasses or molds. Allow to cool slightly before covering and transferring to the refrigerator to set for at least 4 hours or overnight.
