Ingredients

  • 1 pound smoked sausage
  • 1 large yellow onion
  • 1 large red bell pepper
  • 3 medium russet potatoes
  • 1 15-ounce can canned black beans
  • 1 14.5-ounce can diced tomatoes
  • 1 cup frozen corn kernels
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice the smoked sausage into 1/2-inch pieces and set aside.

Step 2

Peel and dice the onion. Core and dice the red bell pepper. Peel and cut the potatoes into small cubes (about 1/2-inch). Mince the garlic cloves. Set all prepared vegetables aside.

Step 3

Drain and rinse the canned black beans. Set aside.

Step 4

Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium heat.

Step 5

Add the smoked sausage slices to the pan. Cook, stirring occasionally, for 5-6 minutes, or until the sausage is lightly browned. Remove the sausage from the pan and set aside.

Step 6

To the same pan, add the diced onions, bell peppers, and potatoes. Cook for 8-10 minutes, stirring occasionally, until the vegetables begin to soften.

Step 7

Stir in the minced garlic, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for 1 minute until the garlic is fragrant.

Step 8

Add the diced tomatoes (with their juices), black beans, and frozen corn. Stir to combine, then bring the mixture to a simmer.

Step 9

Return the browned sausage to the pan. Cover and cook for 10-12 minutes, or until the potatoes are tender and the flavors are well combined. Stir occasionally to prevent sticking.

Step 10

Taste and adjust seasoning with additional salt or pepper if needed.

Step 11

Garnish with freshly chopped parsley before serving. Serve hot.
