Ingredients

  • 12 oz Penne pasta
  • 2 cups Cooked turkey breast (cubed or shredded)
  • 1 cup Cherry tomatoes (halved)
  • 1 Cucumber (diced)
  • 1 Red bell pepper (diced)
  • 1 cup Shredded cheddar cheese
  • 1 cup Ranch dressing
  • 2 tbsp Fresh parsley (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, about 8-10 minutes.

Step 2

While the pasta cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and chop the parsley.

Step 3

Drain the cooked pasta and rinse with cold water to cool it down. Drizzle with olive oil and toss to prevent sticking. Set aside.

Step 4

In a large mixing bowl, combine the cooked pasta, turkey, cherry tomatoes, cucumber, red bell pepper, and cheddar cheese.

Step 5

Add the ranch dressing, salt, and black pepper to the bowl. Toss everything together until coated evenly.

Step 6

Sprinkle the chopped parsley over the top and give it another gentle toss.

Step 7

Taste and adjust seasoning if needed. Add more ranch dressing if desired for extra creaminess.

Step 8

Serve immediately or refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled or at room temperature.
