Ingredients

  • 2 tablespoons Vegetable oil
  • 4 pieces Corn tortillas
  • 4 pieces Eggs
  • 4 medium-sized Tomatoes
  • 1 piece Jalapeño pepper
  • 2 cloves Garlic
  • 1 small White onion
  • 0.25 cup Fresh cilantro
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Refried beans (optional, for serving)
  • 1 piece Avocado (optional, sliced for serving)
  • 0.25 cup Crumbled queso fresco (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a medium skillet over medium heat. Place the corn tortillas in the skillet, one at a time, and fry until crispy, about 1-2 minutes per side. Set the tortillas on a paper towel-lined plate to drain excess oil. Repeat with all tortillas and set aside.

Step 2

In a blender, combine the tomatoes, jalapeño pepper, garlic, white onion (quartered), cilantro, salt, and black pepper. Blend until smooth to create the sauce base.

Step 3

Heat the remaining 1 tablespoon of vegetable oil in a medium saucepan over medium heat. Pour the blended sauce into the pan and simmer for 8-10 minutes, stirring occasionally, until the sauce thickens slightly.

Step 4

In the same skillet used for frying the tortillas, add a little more oil if needed and heat over medium. Crack the eggs into the skillet and fry them to your desired doneness (sunny-side up is traditional). Season lightly with more salt and pepper, if desired.

Step 5

To assemble, place two crispy tortillas on each serving plate. Spread a thin layer of refried beans (if using) over the tortillas. Top each tortilla with a fried egg.

Step 6

Spoon the warm tomato-chili sauce generously over the eggs and tortillas.

Step 7

Garnish with crumbled queso fresco, sliced avocado, or additional fresh cilantro, if desired. Serve immediately and enjoy!
