  • 2 heads bok choy, halved or quartered
  • 3 scallions, chopped
  • 4 soft-boiled eggs, halved
  • 2 seaweed sheets (nori), cut into strips

Directions

Step 1

Heat sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.

Add the chicken thighs to the pot and sear them on both sides until lightly browned, about 3-4 minutes per side.

Pour in the chicken broth and bring it to a boil. Lower the heat to a simmer and add soy sauce and mirin (if using). Cover and cook for 20 minutes, allowing the chicken to become tender and the flavors to meld.
