Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 8 ounces Andouille sausage
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 1 large Red bell pepper, diced
  • 1 large Green bell pepper, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Cajun seasoning
  • 2 cups Cooked white rice
  • 1 can (10 ounces) Diced tomatoes with green chilies (Rotel)
  • 1 cup Chicken broth
  • 2 cups Shredded sharp cheddar cheese
  • 2 tablespoons Chopped green onions
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the chicken breasts into bite-sized pieces and slice the sausage into thin rounds.

Heat a large skillet over medium-high heat and add the olive oil.

Sear the chicken pieces in the skillet until they're lightly browned on the outside but not fully cooked. Remove and set aside.
