Ingredients

  • 480 grams All-purpose flour
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Active dry yeast
  • 240 milliliters Whole milk
  • 60 grams Unsalted butter
  • 1 piece Large egg
  • 150 grams Golden raisins
  • 50 grams Brown sugar
  • 1.5 teaspoons Ground cinnamon
  • 30 grams Melted butter

Directions

Step 1

In a large bowl, combine the flour, granulated sugar, and salt. Set aside.

Step 2

In a small saucepan, warm the milk until it's about 43°C (110°F). Remove from heat and stir in yeast. Let proof for about 5 minutes, or until it becomes foamy.

Step 3

In the bowl of a stand mixer, combine the yeast mixture, the egg, and melted unsalted butter. Gradually add the dry ingredients and knead on medium speed using the dough hook attachment for about 7-10 minutes until the dough is smooth and elastic.

Fold in the raisins until evenly distributed within the dough.

Transfer the dough to a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
