Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 cup Unsalted butter
  • 1 cup Brown sugar, packed
  • 0.5 cups Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 1.5 cups Raisins
  • 0.5 cups Water
  • 1 cup Oats (old-fashioned or quick-cooking)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper or lightly grease it and set aside.

Step 2

In a small saucepan, combine the raisins and water. Bring to a simmer over medium heat and cook for 5 minutes to soften the raisins. Remove from heat and set aside to cool slightly.

Step 3

In a medium bowl, whisk together the flour, ground cinnamon, baking soda, and salt. Set aside.

Step 4

In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 5

Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Stir in the vanilla extract.

Step 6

Gradually add the dry ingredients to the wet mixture, mixing just until combined. Stir in the softened raisins (along with any remaining liquid in the saucepan) and the oats until evenly distributed.

Step 7

Spread the batter evenly into the prepared baking pan using a spatula.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.

Step 9

Allow the raisin bars to cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, slice into 16 bars and serve. Enjoy!
