Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 pound ground beef (80% lean)
  • 0.5 pounds ground pork
  • 1 cup whole milk
  • 1 cup dry white wine
  • 28 ounces canned Italian plum tomatoes, crushed by hand
  • 2 tablespoons tomato paste
  • 1 teaspoon kosher salt
  • 0.5 teaspoons freshly ground black pepper
  • 1 bay leaf
  • 0 fresh grated Parmesan cheese (optional for serving)

Directions

Step 1

Heat the olive oil and butter in a large, heavy-bottomed pot over medium heat.

Step 2

Add the diced onion, carrot, and celery, and sauté until softened, about 8 minutes.

Step 3

Increase the heat to medium-high and add the ground beef and pork to the pot. Cook, breaking up the meat with a wooden spoon, until no pink remains, about 10 minutes.

Step 4

Season the meat mixture with salt and pepper, then pour in the milk. Stir and cook until most of the milk has evaporated, about 10 minutes.

Step 5

Add the dry white wine and cook until the wine has completely reduced, about 8-10 minutes.

Step 6

Stir in the crushed tomatoes, tomato paste, and bay leaf. Lower the heat to a gentle simmer.

Step 7

Cover the pot partially with a lid and let the sauce simmer for 2.5 to 3 hours, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning with more salt and pepper, if needed. Remove the bay leaf before serving.

Step 9

Serve over your favorite pasta, such as tagliatelle or pappardelle, and sprinkle with freshly grated Parmesan if desired.
