Ingredients

  • 1 whole rabbit, jointed into pieces
  • 4 tablespoons olive oil
  • 15 whole shallots, peeled
  • 4 cloves garlic cloves, minced
  • 250 ml red wine
  • 2 tablespoons red wine vinegar
  • 2 tablespoons tomato paste
  • 400 grams canned crushed tomatoes
  • 2 whole bay leaves
  • 1 piece cinnamon stick
  • 4 pieces whole cloves
  • 3 pieces allspice berries
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 250 ml water or chicken stock
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Add the rabbit pieces and sear them on all sides until golden brown. Remove the rabbit and set aside.

Reduce the heat to medium, add the remaining 2 tablespoons of olive oil, and sauté the peeled shallots until caramelized and golden, about 5-7 minutes.

Add the minced garlic and sauté for 1 minute until fragrant.
