Ingredients

  • 1 whole (about 2-3 pounds), cut into pieces rabbit
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 3 medium, sliced carrots
  • 2 sliced celery stalks
  • 3 cloves, minced garlic
  • 2 cups chicken broth
  • 0.5 cup dry white wine
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • 2 tablespoons, chopped (for garnish) fresh parsley

Directions

Step 1

Season the rabbit pieces with salt and black pepper on all sides.

Step 2

Lightly coat the rabbit pieces in all-purpose flour, shaking off any excess.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Sear the rabbit pieces for 2-3 minutes on each side until golden brown. Transfer the seared rabbit to the crock pot.

Step 4

In the same skillet, sauté the diced onion, sliced carrots, and celery for 3-4 minutes, or until they start to soften. Add the minced garlic and cook for an additional minute. Transfer the vegetables to the crock pot.

Step 5

Pour the chicken broth and dry white wine into the crock pot. Add the bay leaf, dried thyme, and paprika. Stir gently to combine the ingredients.

Step 6

Cover the crock pot and cook on low heat for 6-8 hours (or on high heat for 3-4 hours), until the rabbit is tender and fully cooked. The meat should easily pull away from the bone.

Step 7

Remove the bay leaf before serving. Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve the rabbit with its sauce and vegetables over mashed potatoes, rice, or crusty bread. Garnish with freshly chopped parsley.
