Ingredients

  • 1 cup Finger millet (raagi) flour
  • 0.75 cup Powdered jaggery
  • 3 tablespoons Ghee (clarified butter)
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Grated coconut (optional)
  • 2 tablespoons Chopped nuts (e.g. almonds, cashews)

Directions

Step 1

Heat a large, dry pan over low-medium heat. Add the finger millet (raagi) flour and roast it for about 5-7 minutes, stirring continuously to prevent burning. The flour is ready when it emits a nutty aroma and slightly darkens in color. Remove it from the pan and set aside to cool.

Step 2

In the same pan, heat the ghee over medium heat. Add the chopped nuts and sauté them until they are golden brown. If using grated coconut, toss it into the same pan and lightly roast it for 1 minute. Remove from heat.

Step 3

In a mixing bowl, combine the roasted ragi flour, powdered jaggery, cardamom powder, roasted nuts, and coconut (if using). Mix well.

Step 4

Start adding the ghee a little at a time to the mixture and knead it well. The mixture should start to come together into a dough-like consistency.

Step 5

Take small portions of the mixture in your hands and shape them into round balls. If the mixture feels dry, add a teaspoon of warm ghee to moisten it.

Step 6

Place the finished raagi sweet balls on a plate or tray and allow them to cool completely. Once cooled, store them in an airtight container for up to 1 week.
