Ingredients

  • 1 cup Cooked quinoa
  • 1 cup Gluten-free rolled oats
  • 0.5 cup Almond flour
  • 0.5 cup Coconut sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.25 cup Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 1 Egg
  • 0.5 cup Dark chocolate chips (optional)
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the cooked quinoa, gluten-free rolled oats, and almond flour.

Step 3

Add the coconut sugar, baking powder, ground cinnamon, and salt to the dry ingredients, and mix well.

Step 4

In a separate small bowl, whisk together the melted coconut oil, vanilla extract, and the egg until thoroughly combined.

Step 5

Pour the wet mixture into the dry ingredients and stir until a dough forms. If using chocolate chips or chopped nuts, fold them into the dough at this stage.

Step 6

Using a tablespoon, scoop out portions of the dough and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon or your fingers.

Step 7

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store the cookies in an airtight container at room temperature for up to 5 days.
