Ingredients

  • 2 tablespoons olive oil
  • 8 ounces smoked sausage, sliced
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, chopped
  • 3 cloves minced garlic
  • 6 cups chicken broth
  • 2 15-ounce cans canned black-eyed peas, drained and rinsed
  • 1 14.5-ounce can diced tomatoes, with their juice
  • 2 cups cooked white rice
  • 1 bay leaf
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sliced smoked sausage to the pot and cook for 4-5 minutes until browned. Remove the sausage and set aside.

Step 3

In the same pot, add the diced onion, green bell pepper, and celery. Sauté for 5-6 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the pot.

Step 6

Stir in the black-eyed peas, diced tomatoes with their juice, cooked sausage, rice, bay leaf, paprika, dried thyme, salt, and black pepper.

Step 7

Bring the soup to a simmer and let cook for 15 minutes, stirring occasionally, to allow the flavors to meld together.

Step 8

Remove the bay leaf before serving.

Step 9

Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve hot.
