Ingredients

  • 2 cups rolled oats
  • 1 cup crisp rice cereal
  • 0.5 cup honey
  • 0.5 cup peanut butter (or almond butter)
  • 0.25 cup brown sugar
  • 1 teaspoon vanilla extract
  • 0.25 cup mini chocolate chips (optional)
  • 0.25 cup dried fruit (chopped, optional)

Directions

Step 1

Line an 8x8-inch pan with parchment paper and set aside.

Step 2

In a mixing bowl, combine the rolled oats and crisp rice cereal.

Step 3

In a small saucepan over medium heat, stir together the honey, peanut butter, and brown sugar until the mixture is smooth and just begins to bubble.

Step 4

Remove the saucepan from heat and stir in the vanilla extract.

Step 5

Pour the warm honey mixture over the oats and cereal, stirring quickly to coat all the ingredients evenly.

Step 6

If using mini chocolate chips and/or dried fruit, fold them into the mixture once it is slightly cooled to avoid melting the chocolate chips.

Step 7

Transfer the mixture to the prepared pan. Use the back of a spoon or a piece of parchment paper to press it firmly into an even layer.

Step 8

Refrigerate the pan for 1 hour to firm up the mixture.

Step 9

Once set, lift the granola slab out of the pan using the parchment paper and cut it into 12 bars.

Step 10

Store the granola bars in an airtight container at room temperature or in the refrigerator for up to one week.
