Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 0.5 cup Greek yogurt (optional for tanginess)
  • 1 tablespoon dijon mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup celery, finely chopped
  • 0.5 cup red bell pepper, finely diced
  • 0.25 cup red onion, finely chopped
  • 0.5 cup shredded carrots
  • 2 tablespoons fresh parsley, chopped
  • 2 hard-boiled eggs, sliced or chopped (optional)

Directions

Step 1

Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

In a large mixing bowl, combine mayonnaise, Greek yogurt (if using), dijon mustard, white vinegar, sugar, salt, and black pepper. Whisk together until smooth and well blended.

Step 3

Add the cooled macaroni, celery, red bell pepper, red onion, shredded carrots, and fresh parsley to the bowl with the dressing. Toss gently to coat all the ingredients evenly.

Step 4

If using hard-boiled eggs, fold them in carefully at this stage to avoid breaking them apart too much.

Step 5

Taste and adjust the seasoning with more salt and pepper if needed.

Step 6

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.

Step 7

Serve chilled as a side dish or on its own. Enjoy!
