Ingredients

  • 250 grams pasta (spaghetti, penne, or farfalle)
  • 150 grams fresh spinach
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves
  • 50 grams grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)
  • 120 milliliters pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add pasta and cook according to the package instructions until al dente. Reserve 120 milliliters of pasta cooking water before draining the pasta.

Step 2

While the pasta cooks, rinse the spinach thoroughly and pat it dry. Slice the garlic cloves thinly.

Step 3

Heat olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for 1-2 minutes until fragrant and lightly golden.

Step 4

Add the spinach to the skillet, stirring until wilted, about 2-3 minutes. Season with salt, black pepper, and red chili flakes if using.
