Ingredients

  • 2 cups Cooked white rice (day-old works best)
  • 6 cups Chicken or vegetable broth
  • 1 tablespoon Fresh ginger, thinly sliced
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper (optional)
  • 2 stalks Green onions, thinly sliced for garnish
  • 1 cup Cooked chicken, shredded (optional)
  • 1 piece Boiled egg, halved (optional, for garnish)

Directions

Step 1

In a large pot, combine the cooked rice and chicken or vegetable broth.

Step 2

Add the sliced ginger to the pot and bring the mixture to a boil over medium-high heat.

Step 3

Reduce the heat to medium-low and simmer, stirring occasionally, for 15-20 minutes until the rice breaks down and the mixture thickens to a porridge-like consistency.

Step 4

Stir in the soy sauce, sesame oil, salt, and white pepper (if using). Adjust seasoning to taste.

Step 5

If using shredded cooked chicken, stir it into the jook during the last 5 minutes of cooking to warm it through.

Step 6

Ladle the jook into bowls and top with green onions, halved boiled eggs, or any additional garnishes of your choice.

Step 7

Serve hot and enjoy this comforting dish!
