Ingredients

  • 450 grams pumpkin puree
  • 500 ml chicken or vegetable broth
  • 120 ml heavy cream
  • 1 small (finely chopped) onion
  • 2 cloves (minced) garlic
  • 1 tablespoon olive oil
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons (optional, for garnish) pumpkin seeds
  • 1 tablespoon (chopped, optional for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a medium-sized pot over medium heat.

Step 2

Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 3

Add the minced garlic and cook for 1 minute until fragrant, stirring frequently to avoid burning.

Step 4

Stir in the pumpkin puree, chicken or vegetable broth, ground cinnamon, ground nutmeg, salt, and black pepper.

Step 5

Bring the mixture to a simmer. Reduce the heat to medium-low and let it cook for 10 minutes while stirring occasionally.

Step 6

Use an immersion blender to puree the soup until smooth (alternatively, transfer the soup to a countertop blender in batches and blend until smooth before returning it to the pot).

Step 7

Stir in the heavy cream and let the soup cook for an additional 2-3 minutes on low heat. Taste and adjust seasoning if necessary.

Step 8

Serve hot, garnished with a sprinkle of pumpkin seeds, fresh parsley, or both, if desired.
