Ingredients

  • 1 lb boneless pork shoulder
  • 2 tbsp olive oil
  • 1 large onion
  • 3 cloves garlic cloves
  • 2 medium carrots
  • 1 14.5 oz can canned diced tomatoes
  • 2 15 oz cans canned white beans
  • 1 cup chicken broth
  • 1 tsp fresh thyme
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup panko breadcrumbs
  • 2 tbsp butter
  • 2 tbsp fresh parsley

Directions

Step 1

Cut the pork shoulder into 1-inch cubes and season with salt and pepper.

Step 2

Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the pork cubes until browned on all sides, about 5-6 minutes. Remove the pork and set aside.

Step 3

Reduce heat to medium, and add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onion, minced garlic, and sliced carrots. Sauté for 5 minutes until softened.

Stir in the canned diced tomatoes (including their juices), drained and rinsed white beans, chicken broth, fresh thyme, and bay leaf. Return the pork to the skillet and mix everything together.
