Ingredients

  • 2 medium sweet onions
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon peppercorns
  • 1 whole garlic clove
  • 0.5 teaspoons crushed red pepper flakes (optional)

Directions

Step 1

Peel and thinly slice the sweet onions into rings or half-moons, depending on your preference.

Step 2

In a medium saucepan, combine white vinegar, water, granulated sugar, and salt. Stir the mixture over medium heat until the sugar and salt dissolve completely, about 2 minutes. Do not let it boil.

Step 3

Remove the saucepan from heat and stir in the peppercorns, whole garlic clove, and crushed red pepper flakes, if using.

Step 4

Place the sliced onions into a clean mason jar or heatproof container.

Step 5

Carefully pour the warm pickling liquid over the onions, making sure all the slices are fully submerged. Use a spoon to press the onions down if needed.

Step 6

Let the mixture cool to room temperature, about 20-30 minutes. Once cooled, seal the jar and refrigerate.

Step 7

The onions will be ready to eat after 1 hour but develop a more robust flavor after 24 hours. Store in the refrigerator for up to 2 weeks.
