Ingredients

  • 300 grams fresh okra (ladies' fingers)
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1.5 teaspoons coriander powder
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon garam masala
  • 2 tablespoons mustard oil (or vegetable oil)
  • 0.25 cup water
  • 0.5 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Wash and pat dry the okra thoroughly. Trim the ends and cut into 1-inch pieces.

Step 2

Heat mustard oil in a pan over medium heat until it starts to shimmer. Add cumin seeds and let them sizzle for 30 seconds.

Step 3

Add the chopped onion and sauté until golden brown, about 4-5 minutes.

Step 4

Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.

Step 5

Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes soften and the mixture forms a thick paste, about 3-4 minutes.

Step 6

Add the chopped okra to the pan and mix well, ensuring all pieces are coated with the spiced tomato mixture.

Step 7

Pour in 1/4 cup of water, cover the pan, and cook on low heat for 8-10 minutes, stirring occasionally, until the okra is tender.

Step 8

Uncover the pan, add garam masala and salt, and stir to combine. Cook for another 2 minutes to let the flavors meld.

Step 9

Turn off the heat and garnish with fresh chopped cilantro before serving. Serve hot with rice or flatbread.
