Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces button mushrooms
  • 3 cloves garlic cloves, minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 teaspoon thyme, fresh or dried
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Add the chicken breasts to the skillet and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set it aside.

Step 4

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until the mushrooms are tender and browned.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Pour in the chicken broth and bring it to a simmer, using a wooden spoon to scrape up any browned bits from the bottom of the pan.

Step 7

Stir in the heavy cream and thyme, and let the sauce simmer for 2-3 minutes until slightly thickened.

Step 8

Return the chicken breasts to the skillet, spooning some of the sauce over them. Reduce the heat to low and cook for an additional 5-6 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 9

Taste the sauce and adjust seasoning with additional salt and pepper, if needed.

Step 10

Garnish with fresh parsley if desired and serve immediately. Pair with rice, mashed potatoes, or steamed vegetables.
