Ingredients

  • 300 grams pasta (penne or fusilli)
  • 150 grams Spanish chorizo, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 1.5 teaspoons smoked paprika
  • 400 grams crushed tomatoes
  • 0.5 teaspoons red chili flakes
  • 50 grams Manchego cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 1 cup of pasta water before draining.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the sliced chorizo and cook for 3-4 minutes until slightly crisp. Remove the chorizo from the pan and set aside.

Step 3

In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute.

Add the smoked paprika and red chili flakes to the pan, stirring to coat the onions and garlic.
