Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 2 tablespoons olive oil
  • 4 garlic cloves (minced)
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons dried oregano
  • 2 tablespoons fresh parsley (chopped, optional for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt, pepper, and dried oregano.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts.

Step 3

Cook the chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Step 5

Stir in the chicken broth, lemon juice, and lemon zest, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Simmer for 3-4 minutes to allow the flavors to combine.

Step 6

Whisk in the butter until it melts and the sauce becomes smooth and velvety.

Step 7

Return the cooked chicken breasts to the skillet, spooning the sauce over them to coat. Allow them to warm through for 2-3 minutes.

Step 8

Garnish the dish with fresh parsley if desired and serve immediately. This pairs well with rice, pasta, or a side of steamed vegetables.
