Ingredients

  • 500 grams lamb shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 medium carrots, peeled and sliced into rounds
  • 2 celery stalks, chopped
  • 4 medium golden potatoes, peeled and cubed
  • 2 garlic cloves, minced
  • 4 cups beef or vegetable stock
  • 2 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon all-purpose flour (optional, for thickening)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the lamb cubes with salt and pepper, then sear them in the hot oil until browned on all sides. Remove the lamb and set it aside.

Step 3

In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.

Step 4

Sprinkle the optional flour over the vegetables and stir to coat evenly for 1 minute.

Step 5

Return the browned lamb to the pot, then pour in the stock. Stir to combine, scraping up any browned bits stuck on the bottom of the pot.

Step 6

Add the potatoes, thyme, bay leaf, salt, and pepper. Bring the stew to a boil, then reduce the heat to low and simmer uncovered for 30 minutes, stirring occasionally.

Step 7

Check for seasoning and adjust with additional salt or pepper if needed.

Step 8

Remove the thyme sprigs and bay leaf before serving.

Step 9

Garnish with chopped parsley and serve hot with rustic bread or on its own.
