Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef stew meat, cubed
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons paprika (preferably sweet Hungarian paprika)
  • 1 teaspoon caraway seeds
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup sour cream (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Add the beef cubes into the pot and sear them on all sides until browned, about 5 minutes. Remove the beef and set aside.

Step 3

Lower the heat to medium and add the diced onion to the pot. Sauté for 3-4 minutes until softened and translucent.

Step 4

Add the minced garlic, paprika, and caraway seeds, stirring constantly for 1 minute to release the aromas of the spices.

Step 5

Add the sliced red and green bell peppers, and sauté for another 3 minutes until slightly softened.

Step 6

Stir in the tomato paste and cook for 1-2 minutes to deepen its flavor.

Step 7

Return the browned beef to the pot and pour in the beef broth. Stir well to combine and bring the mixture to a simmer.

Step 8

Season with salt and black pepper, cover the pot with a lid, and let it simmer for 20 minutes over medium-low heat, stirring occasionally.

Step 9

Taste the goulash and adjust the seasoning if needed. If the sauce is too thick, add a splash of beef broth to loosen it to your desired consistency.

Step 10

Serve hot, optionally garnished with a dollop of sour cream and a sprinkle of fresh parsley. Enjoy!
