Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking soda
  • 0.25 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1 cups Granulated sugar
  • 1 large Egg
  • 0.25 cups Molasses
  • 1 teaspoon Vanilla extract
  • 0.25 cups Extra granulated sugar for rolling

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats and set aside.

Step 2

In a medium mixing bowl, whisk together the flour, ground ginger, cinnamon, baking soda, and salt until well combined. Set aside.

Step 3

In a large mixing bowl, using a hand or stand mixer, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the egg, molasses, and vanilla extract to the butter-sugar mixture. Beat on medium speed until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients. Mix until just combined, being careful not to overmix.

Step 6

Scoop out about 1 tablespoon of dough and roll it into a ball. Repeat with the remaining dough.

Step 7

Roll each cookie dough ball in the extra granulated sugar to coat it evenly. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are set and the tops are slightly cracked. Be careful not to overbake for soft and chewy cookies.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy your Quick Ginger Cookies with a glass of milk or a warm cup of tea!
