Ingredients

  • 4 cups Cooked white rice (day-old, if possible)
  • 2 tablespoons Vegetable oil
  • 2 large Eggs
  • 1 cup Frozen vegetables (peas, carrots, and corn mix)
  • 3 tablespoons Soy sauce
  • 2 stalks Green onions (sliced)
  • 2 cloves Garlic (minced)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoons Sesame oil (optional, for finishing)

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 2

Crack the eggs into the skillet, scramble them lightly, and cook until just set. Remove the eggs to a plate and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Add the frozen vegetables to the skillet and cook for 3-4 minutes, stirring frequently, until they are heated through.

Step 5

Add the cooked rice to the skillet, breaking up any clumps with a spatula or spoon. Stir everything together to combine evenly.

Step 6

Drizzle the soy sauce over the rice and mix well to coat all the grains evenly. Adjust seasoning with salt and black pepper.

Step 7

Push the rice mixture to one side of the skillet and return the scrambled eggs to the other side. Break the eggs into small pieces with your spatula and mix them into the rice.

Step 8

Toss in the sliced green onions and stir briefly to combine. Remove the skillet from heat.

Step 9

Optional: Drizzle the sesame oil over the fried rice and give it a final mix for added flavor.

Step 10

Serve hot and enjoy your Quick Fried Rice!
