Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned red kidney beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.5 cup water or beef broth

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat and add olive oil.

Step 2

Add the diced onion and cook until softened, about 2-3 minutes.

Step 3

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-6 minutes. Drain excess fat if needed.

Step 5

Stir in the chili powder, ground cumin, paprika, salt, and black pepper. Cook for 1 minute to toast the spices.

Step 6

Add the canned diced tomatoes, tomato paste, kidney beans, and water or beef broth. Stir everything together until well combined.

Step 7

Bring the chili to a simmer and reduce the heat to medium-low. Let it cook uncovered for 10-15 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning as needed. Add more chili powder or salt if desired.

Step 9

Serve hot with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or tortilla chips.
