Ingredients

  • 120 grams unsalted butter
  • 100 grams granulated sugar
  • 150 grams all-purpose flour
  • 150 grams shredded coconut (sweetened)
  • 200 grams sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

In a medium mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

Step 3

Gradually add in the all-purpose flour and salt, mixing until the dough comes together to form a crumbly mixture.

Step 4

Press the dough evenly into the bottom of the prepared baking pan to form the crust. Bake for 10 minutes or until lightly golden.

Step 5

While the crust is baking, combine the shredded coconut, sweetened condensed milk, and vanilla extract in a mixing bowl. Stir until the mixture is well combined.

Step 6

Once the crust is done baking, remove it from the oven and evenly spread the coconut mixture over the top.

Step 7

Return the pan to the oven and bake for an additional 15-18 minutes, or until the top is lightly golden and set.

Step 8

Allow the bars to cool completely in the pan, then lift them out using the parchment paper overhang. Slice into 12 bars and serve.

Step 9

Store any leftovers in an airtight container at room temperature for up to 3 days.
