  • 4 pieces boneless, skinless chicken thighs

  • 8 ounces smoked sausage, sliced into 1/4-inch coins
  • 1 medium onion, diced
  • 4 pieces garlic cloves, minced
  • 1 14.5-ounce can canned diced tomatoes
  • 2 15-ounce cans canned white beans (such as cannellini), drained and rinsed
  • 1 cup chicken broth
  • 1 teaspoon fresh thyme leaves
  • 0.5 cup panko breadcrumbs
  • 0.25 cup parmesan cheese, grated
  • 2 tablespoons parsley, chopped, for garnish

Directions

Step 1

Season the chicken thighs evenly on both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
