Ingredients

  • 4 pieces Large flour tortillas
  • 2 cups Shredded mozzarella cheese
  • 1 cup Cooked chicken breast, shredded
  • 1 cup Pineapple, diced
  • 1 medium Red bell pepper, finely chopped
  • 0.5 medium Red onion, finely chopped
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 1 tablespoon Olive oil
  • 1 piece Lime, cut into wedges (optional)

Directions

Step 1

Heat the olive oil in a large non-stick skillet over medium heat.

Add the red bell pepper and red onion to the skillet. Sauté for 3-4 minutes until they begin to soften.

Stir in the diced pineapple, shredded cooked chicken, ground cumin, and chili powder. Cook for an additional 2-3 minutes to combine flavors. Remove the filling from the skillet and set aside.
