Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces andouille sausage, sliced
  • 2 bell peppers (assorted colors), chopped

  • 3 cloves garlic, minced
  • 1 zucchini, sliced
  • 2 cups cooked white or brown rice
  • 2 tablespoons olive oil
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional for garnish)
  • 4 lemon wedges (for serving, optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the sliced andouille sausage and cook for 3-4 minutes until browned. Remove sausage from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil, along with the chopped bell peppers, onion, zucchini, and garlic. Cook for 5-6 minutes until the vegetables are tender but still slightly crisp.
