Ingredients

  • 6 medium Russet potatoes
  • 2 cups Shredded cheddar cheese
  • 1 cup Sour cream
  • 4 tablespoons Butter
  • 0.5 cup Milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Chopped fresh parsley (optional)
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with cooking spray.

Step 2

Peel the potatoes and cut them into 1/4-inch slices.

Step 3

Place the potato slices in a large pot of cold, salted water. Bring the water to a boil over high heat, then reduce the heat to medium-low and simmer for 10-12 minutes or until the potatoes are just tender. Drain and set aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Once melted, add the milk, sour cream, garlic powder, salt, and black pepper. Stir until smooth and heated through, about 2-3 minutes. Remove from heat.

Step 5

In the greased casserole dish, layer half of the potato slices evenly across the bottom. Pour half of the sour cream mixture over the potatoes, followed by 1 cup of shredded cheddar cheese.

Step 6

Add the remaining potato slices in an even layer. Pour the rest of the sour cream mixture on top, followed by the remaining 1 cup of shredded cheddar cheese.

Step 7

Sprinkle the breadcrumbs evenly over the top of the casserole.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.

Step 9

Remove the casserole from the oven. Let it sit for 5 minutes before serving.

Step 10

Garnish with fresh parsley, if desired, and serve warm.
