  • 1 store-bought or homemade pie crust
  • 4 large eggs
  • 1 cup heavy cream
  • 0.5 cup whole milk
  • 1 cup shredded Gruyere cheese
  • 6 slices cooked and crumbled bacon
  • 1 cup chopped fresh spinach
  • 0.5 cup diced onion
  • 0.5 cup diced red bell pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon ground nutmeg

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Roll out the pie crust and press it into a 9-inch pie dish. Trim any excess overhang and crimp the edges. Prick the bottom of the crust with a fork to prevent it from puffing up.

Blind-bake the crust: Line the pie crust with parchment paper or aluminum foil, then fill it with pie weights or dried beans. Bake for 10 minutes, then remove the weights and bake for another 5 minutes. Set aside to cool slightly.
