Ingredients

  • 4 pieces Flour tortillas
  • 2 cups Shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 cup Cooked chicken, shredded (optional)
  • 0.5 cup Cooked black beans (optional)
  • 1 cup Sautéed vegetables (e.g., bell peppers, onions, mushrooms, optional)
  • 0.5 cup Fresh spinach (optional)
  • 2 tablespoons Chopped fresh cilantro (optional)
  • 2 tablespoons Butter or cooking oil
  • 0.5 cup Sour cream (for serving, optional)
  • 0.5 cup Salsa or pico de gallo (for serving, optional)
  • 0.5 cup Guacamole (for serving, optional)

Directions

Step 1

Preheat a large non-stick skillet or griddle over medium heat.

Step 2

Place a tortilla on a clean surface. Spread 1/2 cup of shredded cheese evenly across one half of the tortilla.

Step 3

If using optional fillers like shredded chicken, black beans, sautéed vegetables, spinach, or cilantro, layer them over the cheese on the same half of the tortilla.

Step 4

Fold the tortilla in half to create a half-moon shape, gently pressing down to secure the fillings.

Step 5

Add 1/2 tablespoon of butter or drizzle a small amount of cooking oil in the preheated skillet. Swirl to coat the surface.

Step 6

Carefully place the folded tortilla in the skillet. Cook for 2–3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted.

Step 7

Repeat the process with the remaining tortillas and fillings, adding more butter or oil as needed.

Step 8

Once cooked, transfer the quesadillas to a cutting board and let them cool slightly. Cut into wedges for serving.

Step 9

Serve warm with sour cream, salsa or pico de gallo, and guacamole, if desired.
