Ingredients

  • 4 pieces Flour tortillas
  • 200 grams Brie cheese
  • 100 grams Fresh spinach leaves
  • 50 grams Sun-dried tomatoes (julienned)
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Chili flakes
  • 1 tablespoon Honey
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a large non-stick skillet over medium heat.

Step 2

Slice the brie cheese into thin, even pieces and set aside.

Step 3

In a small bowl, mix the olive oil, garlic powder, chili flakes, salt, and black pepper to create a spiced oil blend.

Step 4

Brush one side of each tortilla lightly with the spiced oil mixture and set them oiled-side-down on a clean surface.

Step 5

On two of the tortillas (the base layer), evenly distribute the spinach leaves, sun-dried tomatoes, and sliced brie cheese. Drizzle a light amount of honey over the toppings for a touch of sweetness.

Step 6

Place the remaining two tortillas (the top layer) over the prepared base layer tortillas, oiled-side-up, to form quesadillas.

Step 7

Transfer one quesadilla to the preheated skillet and cook for 2-3 minutes on one side, until golden and crispy. Carefully flip using a spatula, and cook the other side for an additional 2-3 minutes. Repeat with the second quesadilla.

Step 8

Remove the quesadillas from the skillet, allow them to rest for 1-2 minutes, and then slice into wedges.

Step 9

Serve warm with a side of salsa, guacamole, or sour cream, if desired.
