  • 150 grams Chicken thigh (boneless, skinless), cut into bite-sized pieces
  • 100 grams Daikon radish, peeled and thinly sliced
  • 100 grams Carrot, peeled and thinly sliced
  • 50 grams Spinach, washed and cut into 2-inch lengths
  • 8 slices Kamaboko (Japanese fish cake), sliced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sake
  • 0.5 teaspoons Salt
  • 2 tablespoons Mitsuba (Japanese parsley) or green onions, chopped (optional)

Directions

Step 1

Preheat your oven or toaster oven to 400°F (200°C). Place the mochi pieces on a baking sheet and toast them for 6-8 minutes until they puff up and turn golden. Alternatively, you can cook the mochi in a dry nonstick pan over medium heat.

Step 2

In a medium-sized pot, bring the dashi stock to a gentle boil over medium heat.

Add the chicken pieces to the pot and simmer for 5-7 minutes until the chicken is cooked through. Skim off any foam or impurities that rise to the surface.

Add the daikon and carrot slices to the pot. Simmer for 5 minutes until the vegetables are tender.
