Ingredients

  • 450 grams beef sirloin
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 200 grams snow peas
  • 3 cloves garlic
  • 1 inch piece ginger
  • 2 tablespoons vegetable oil
  • 3 tablespoons water

Directions

Step 1

Slice the beef sirloin thinly against the grain into bite-sized strips. Toss the beef in a bowl with 1 tablespoon of cornstarch and 2 tablespoons of soy sauce, and let it marinate for 10-15 minutes while you prepare the other ingredients.

Step 2

Trim the snow peas and set them aside. Mince the garlic cloves and grate the ginger. Mix 3 tablespoons of oyster sauce, 1 teaspoon of sugar, 1 teaspoon of sesame oil, and 3 tablespoons of water in a small bowl to create the sauce.

Step 3

Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl it around to coat the pan. Once the oil is shimmering hot, add the beef slices in a single layer. Cook for about 1-2 minutes on each side until browned, then remove from the wok and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the wok. Toss in the minced garlic, grated ginger, and snow peas. Stir-fry for about 2-3 minutes, or until the snow peas are bright green and tender-crisp.

Step 5

Return the cooked beef to the wok and stir to combine with the snow peas. Pour the prepared oyster sauce mixture over everything and toss well to coat evenly. Let the mixture cook for 1-2 minutes until heated through.

Step 6

Remove from heat and transfer the Oyster Sauce Beef and Snow Peas to a serving dish. Serve hot with steamed rice or noodles.
