Ingredients

  • 1 pound Owen's sausage (mild or spicy)
  • 1 pound Ground beef
  • 1 medium Onion, diced
  • 1 medium Bell pepper, diced
  • 3 cloves Garlic cloves, minced
  • 28 ounces Canned diced tomatoes
  • 15 ounces Tomato sauce
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned black beans, drained and rinsed
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional for extra heat)
  • 1 tablespoon Olive oil
  • 0 optional Shredded cheddar cheese (for topping)
  • 0 optional Chopped green onions (for topping)
  • 0 optional Sour cream (for topping)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the Owen’s sausage and ground beef to the pot, breaking the meat apart as it cooks. Cook until browned and no longer pink, about 7-8 minutes. Drain excess grease if needed.

Step 3

Stir in the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are soft, about 5 minutes.

Step 4

Add the canned diced tomatoes (with their juice), tomato sauce, kidney beans, black beans, and beef broth to the pot. Stir to combine.

Step 5

Mix in the chili powder, ground cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Stir well.

Step 6

Bring the chili to a simmer over medium heat, then reduce the heat to low. Cover and let it cook for 45 minutes, stirring occasionally.

Step 7

Taste the chili and adjust seasoning as needed. If the chili is too thick, you can add more beef broth or water to reach your desired consistency.

Step 8

Serve the chili hot in bowls. Top with shredded cheddar cheese, chopped green onions, and sour cream if desired.
