  • 1 piece whole turkey (12-15 pounds)
  • 1 cup unsalted butter, softened
  • 2 tablespoons kosher salt

  • 1 piece onion, quartered
  • 1 piece lemon, halved
  • 3 pieces fresh rosemary sprigs
  • 6 pieces fresh sage leaves
  • 2 pieces carrots, cut into chunks
  • 2 pieces celery stalks, cut into chunks
  • 2 cups chicken broth

Directions

Step 1

Preheat your oven to 450°F (232°C).

Step 2

Remove the turkey giblets and neck from the cavity. Rinse the turkey under cold water and pat it dry with paper towels.

Step 3

In a small bowl, mix together the softened butter, kosher salt, black pepper, garlic powder, paprika, and dried thyme to create a flavorful butter mixture.

Carefully loosen the skin over the turkey breast using your fingers or a spoon. Spread half of the butter mixture under the skin, directly over the meat. Spread the remaining butter mixture all over the top of the turkey skin.
