Wake up to the irresistible aroma of freshly baked *Overnight Coffee Loaves*! Infused with the deep, rich flavor of instant coffee, this moist and buttery loaf is the perfect treat for coffee lovers. By allowing the batter to rest overnight, the flavors intensify, creating a tender crumb and an indulgent depth of taste. A touch of brown sugar adds caramel-like undertones, while optional chocolate chips or nuts provide a delightful texture. This make-ahead recipe is ideal for busy mornings or special brunches, requiring just a quick bake to start your day off right. Serve it warm on its own or slathered with butter, and savor every perfectly brewed bite.
In a small bowl, dissolve the instant coffee granules in the boiling water and let it cool to room temperature.
In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, mixing well after each addition. Beat in the vanilla extract and cooled coffee mixture until fully incorporated.
Gradually add the dry ingredients to the wet ingredients in 3 portions, alternating with the milk in 2 portions (beginning and ending with the dry ingredients). Mix just until combined. Be careful not to overmix.
If using chocolate chips or nuts, gently fold them into the batter with a spatula.
Grease a standard loaf pan (about 9x5 inches) and pour the batter into it, smoothing the top with a spatula.
Cover tightly with plastic wrap or aluminum foil and refrigerate the batter overnight to allow the flavors to develop.
The next day, preheat your oven to 175°C (350°F). Remove the loaf pan from the refrigerator and let it sit at room temperature for 15-20 minutes.
Bake the loaf in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean or with only a few moist crumbs.
Let the coffee loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Serve on its own or with a spread of butter. Store leftovers in an airtight container for up to 3 days.
