Ingredients

  • 240 grams All-purpose flour
  • 2 tablespoons Instant coffee granules
  • 120 milliliters Boiling water
  • 115 grams Unsalted butter, softened
  • 200 grams Granulated sugar
  • 75 grams Brown sugar (light or dark)
  • 2 Eggs, large
  • 2 teaspoons Vanilla extract
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 120 milliliters Whole milk
  • 75 grams Optional: Chocolate chips or chopped nuts

Directions

Step 1

In a small bowl, dissolve the instant coffee granules in the boiling water and let it cool to room temperature.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Add the eggs one at a time, mixing well after each addition. Beat in the vanilla extract and cooled coffee mixture until fully incorporated.

Gradually add the dry ingredients to the wet ingredients in 3 portions, alternating with the milk in 2 portions (beginning and ending with the dry ingredients). Mix just until combined. Be careful not to overmix.
