Ingredients

  • 1 pound Breakfast sausage
  • 8 pieces Large eggs
  • 2 cups Whole milk
  • 2 cups Grated cheddar cheese
  • 6 cups Day-old bread (cubed)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion (diced)
  • 1 medium Bell pepper (diced)
  • 1 tablespoon Butter (for greasing the pan)

Directions

Step 1

Heat a large skillet over medium heat and cook the breakfast sausage, breaking it up into crumbles, until browned and fully cooked. Remove from the heat and set aside.

Step 2

In the same skillet, sauté the diced onion and bell pepper until softened, about 4–5 minutes. Set aside with the sausage.

Step 3

Grease a 9x13-inch baking dish with the butter to prevent sticking.

Step 4

Evenly spread the cubed bread in the prepared baking dish.

Step 5

Sprinkle the cooked sausage and sautéed vegetables over the bread cubes, spreading them evenly.

Step 6

In a large mixing bowl, whisk together the eggs, whole milk, salt, and black pepper until well combined.

Step 7

Pour the egg mixture evenly over the bread, sausage, and vegetables in the baking dish. Use a spatula to gently press the ingredients down to ensure they're soaked in the egg mixture.

Step 8

Sprinkle the grated cheddar cheese evenly over the top of the casserole.

Step 9

Cover the dish tightly with aluminum foil and refrigerate overnight (or at least 6–8 hours).

Step 10

When ready to bake, preheat your oven to 350°F (175°C).

Step 11

Remove the casserole from the refrigerator and let it sit at room temperature for 20–30 minutes while the oven preheats.

Step 12

Bake the casserole (still covered with foil) in the preheated oven for 30 minutes.

Step 13

Remove the foil and continue baking for an additional 20–25 minutes, or until the top is golden brown and the eggs are set.

Step 14

Remove the casserole from the oven and allow it to cool for 5–10 minutes before slicing into squares and serving.
