Ingredients

  • 500 grams Chicken thighs (boneless, skinless)
  • 150 grams Greek yogurt (full-fat)
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 2 tablespoons Lemon juice
  • 2 teaspoons Kashmiri red chili powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)
  • 0 Sliced lemon (for garnish)

Directions

Step 1

Wash and pat dry the chicken thighs. Cut them into bite-sized pieces and set them aside.

Step 2

In a large mixing bowl, combine the Greek yogurt, ginger paste, garlic paste, lemon juice, Kashmiri red chili powder, ground coriander, ground cumin, turmeric powder, garam masala, paprika, salt, and vegetable oil. Mix well to create the marinade.

Step 3

Add the chicken pieces to the marinade, ensuring all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to infuse.

Step 4

Preheat your oven to 220°C (425°F). Line a baking tray with aluminum foil and place a wire rack on top. Lightly oil the wire rack to prevent sticking.

Step 5

Arrange the marinated chicken pieces on the wire rack, ensuring they are spaced apart for even cooking.

Step 6

Roast the chicken in the preheated oven for 20-25 minutes, flipping the pieces halfway through, until they are cooked through and slightly charred on the edges.

Step 7

Once cooked, remove the chicken from the oven and let it rest for a few minutes.

Step 8

Garnish with chopped fresh cilantro and sliced lemon. Serve hot with naan, rice, or a salad.
